Symbol of long life in Asia, the Shiitake has been used by the Chinese for more than 6,000 years. Shiitake mushrooms are one of the most widely cultivated mushrooms in the world. Shiitake is found on fallen hardwood trees primarily in temperate regions of Asia. It grows mainly on chestnut trees (Shii in Japanese), hence its name “Shiitake” (mushroom in Japanese). This mushroom is known to be one of the most popular sources of protein in Japan. It contains all eight essential amino acids as well as a blend of vitamins and minerals (including vitamin A, B, C, D, potassium and zinc) and polysaccharides (especially known as lentinan). Scientific studies have reported and indicated that shiitake is used to lower cholesterol, lower fat and scavenge free radicals. It is said to be anti-allergic, anti-inflammatory and anti-bacterial. The traditional oriental folklore prizes shiitake as "the ginseng of mushrooms" due to its generally rejuvenating powers. The old time healers prescribed it for long-life, vitality and well-being.
